Five Things

Oh, hey! Hello! Happy Friday!

It’s been a crazy week around our house. I’ve been sick (like, ER trip sick), but I think I’m FINALLY on the mend and am looking forward to the weekend. Here are five things on my mind this week:

1. Nacho Friday. For a couple of years, Friday nights meant homemade pizza. I would spend naptime making cauliflower crust and then add the toppings at dinnertime. Then the kids decided they didn’t like cauliflower pizza (it’s still one of my favorites – kids are weird), and they didn’t like store-bought gluten-free crusts (not my favorite, either). So we switched it up to Nacho Friday. This has been a game changer. Now, every Friday, just before Family Movie Night, we make a huge pile of nachos. Some weeks, we get fancy and use a recipe, most weeks, it’s Clean-Out-the-Fridge, Everything-but-the-Kitchen-Sink style. The Friday after St. Patrick’s Day, we used corned beef (SO good, especially with pepperoncinis), last week we had leftover chicken-apple sausage (trust me). There are always onions, usually beans, sometimes tomatoes, and lots of cheese. No two weeks are ever the same. Served up with sour cream, salsa, and guacamole (sometimes homemade), it’s always a hit.

2. The Castle Next Door. While I was sick this week, I spent a lot of time on the iPad. We still don’t have a TV. I KNOW! Eventually. Anyway, I found this show about the Novogratz Family online and binge watched. (Episodes are only 5 minutes, so it’s not like REAL binge watching.) What a fun family! And how cool would it be to live in a castle?

A creative life is an amplified life.3. This quote. I’m almost finished reading Big Magic by Elizabeth Gilbert. While there are a few parts that are a little “out there”, I’ve underlined and scribbled notes throughout. It has made me change my perspective on ideas relating to creativity and making things and the importance of it all to your well-being. An inspiring read!

4. Salt Waters. BG has had at least 3 pairs of these in her life, and every time she wears them, I wish I had some, too. (She just learned how to unbuckle herself yesterday – a milestone!) I think I’m finally going to get a pair this summer. And, yes, definitely in red.

5. This made me chuckle.

What are you up to this weekend? BB has a baseball game, and we’re thinking we’ll catch a local college baseball game as well. There will be lots of downtime, too – this round of illness has wiped me out. Looking forward to reading and napping and watching movies with the family. Hope your weekend is a fun one!
